Braised String Beans

3/4 lb green beans
1 tbsp dried shrimp
2 cloves garlic, finely minced
1 stem scallion, minced
1/2 tbsp ginger, finely minced
2 tbsp preserved radish
2 tbsp soy sauce
1/2 tsp sugar
2 tbsp vegetable oil
1/8 tsp white pepper

Cut green beans into approximately 3 inch pieces. Blanch the green beans in a pot of boiling water for approximately 2 to 3 minutes. Green beans should be cooked through but not mushy. Remove the green beans and soak in cold water to stop the cooking.

Soak the dried shrimp in 1/4 cup of hot water for approximately 5 minutes. Drain the water then dice shrimp finely.

In a wok or pan, heat vegetable oil until hot. Add garlic, scallions, and ginger, dried shrimp, preserved radish, and cook until fragrant, approximately 30 seconds. Add soy sauce and sugar and stir. Add in string beans and stir to heat the string beans thoroughly. Sprinkle with white pepper just prior to serving.
